It’s the end of summer in New York. Specifically, Labor Day weekend. I’m taking advantage by cooking with my favorite summer ingredient, a few lovely heirloom tomatoes. When they are in season, I eat them on basically everything in every form. In my opinion, they don’t really need anything at all except maybe some salt. When I’m being lazy, I typically go in the direction of Tomato + Mayo sandwiches like Harriet the Spy (that girl knew what was up).
When I’m looking for a bit of an upgrade, I leave out the mayo and grab some feta cheese then drizzle some honey on top of the mixture. Recently, I was wandering around my local Whole Foods and stumbled on some very special honey from a Brooklyn based company company called MixedMade. Their Bees Knees Spicy Honey (pictured below) is fantastic, it’s a chili pepper infused honey that beautifully marries sweet and subtle heat. I figured that this honey might just take this tomato toast up a level, and really did! If you’re not able to find it, regular honey works well here as well. Make sure to grab high quality feta and the yummiest looking tomatoes you can lay your hands on for this, as simple dishes need special ingredients….
